RECIPE OF THE WEEK: Apple cake

Apple Cake
4 c. Jonathon apples, peeled and finely chopped
2 c. flour
2 c. sugar
2 eggs
1 c. nuts
3/4 c. oil
2 tsp. ground cinnamon
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda

Combine sugar with apples and let stand until they get juicy. Mix together cinnamon, salt, soda and flour, stir into apples. Mix together oil, vanilla, eggs and nuts. Stir into apple and flour mixture. Lightly spray a 13x9 inch baking dish with non-stick cooking spray and pour in cake mix. Bake for 55 to 60 minutes at 350 degrees.
